Mediterranean-Style Baked Grouper with Tomatoes and Olives

Recently my husband and I spent a week down at a nearby beach, one of our favorite spots, St Teresa Beach, Fl. Of course, coming home we couldn't resist stopping by a favorite local fish monger to pick up some fresh seafood to take home. We came home with local fresh grouper and lump blue crab meat. I had been looking for a new recipe to try and am also trying to eat healthier, so I gave this recipe a go. 
This recipe turned out to be amazing and even passed the test of "Mr. Picky Eater". 😀 To make things even better it is a recipe with an easy and quick prep and only takes about 20 minutes to bake. I baked it just a little longer than the recipe calls for but yet it didn't dry out too much.
Black Grouper is my most favorite fish and with the combination of the seasonings, garlic, tomatoes, briny kalamata olives all of which I had in my pantry, well it just put this baked fish dish right over the top. I give this one an A plus.

Mediterranean-Style Baked Grouper with Tomatoes and Olives

1 1/2 lb. grouper fillet

kosher salt

1 T dry oregano

1tsp ground cumin

1tsp sweet paprika

1/2 tsp black pepper

4 garlic cloves, minced

Juice of 1 large lemon, more for later

Extra virgin olive oil

6 to 8 cherry tomatoes, halved

6 to 8 kalamata olives, halved

Chopped fresh dill, about 1/4 oz.


Heat oven to 400* F. Pat the fish dry and season with salt on both sides. In a small bowl, combine the spices, cumin, oregano, paprika, and black pepper. Season the fish with the spice mixture on both sides.

Place seasoned fish in a lightly oiled baking dish. Add minced garlic on top, then add lemon juice and a generous drizzle of extra virgin olive oil. Arrange cherry tomatoes and olives on top of the fish fillets.

Bake in heated oven for 12 to 13 minutes, or until the fish is opaque and easily flakes with a fork. Remove from heat and add fresh dill or your favorite herb.

I pared this dish with a simple salad that was topped with a favorite dressing. We had picked up a bottle of Angelo's Greek dressing before coming home from the beach. Angelo's is a local favorite restaurant while down at our beach destination. The dressing made for a perfect paring with this Greek style grouper.
If you are looking for a delicious but yet really healthy seafood dish this one is outstanding. Also just takes minutes to put together. If you don't have access to black grouper as I do, any firm white fish can be substituted.
